Born in Angers, he began his career as a commis at Troisgros in Roanne in 2010, before moving on to Monaco, where he worked at the Louis XV alongside Alain Ducasse.

He then moved on to other Michelin-starred establishments, enriching his expertise and confirming his passion.

His values place people at the heart of his work, both his teams and his suppliers.

His cuisine? Freshness, quality local produce and always a touch of acidity!

In the evening, you’ll find a gourmet menu at the Table du Castillon and at lunchtime, lighter, more relaxed cuisine served by the pool.
